Stopping the fermentation process at the right time by skilled tea masters is what gives this tea its character, where only the outer edges are fermented, the centre remains green. Cultivated in the Taiwanese highlands, the leaf has many shades of green and brown and is more finely processed, the mixture of brown and green can be seen in the cup! The taste has a very slight black tea character with a smooth sweetness and a slightly doughy note. A great introduction to the world famous Taiwanese Oolongs.
