Traditional Taiwanese methods are used to produce this high grade variety. Once the fresh leaves have been picked, they are then laid on a cloth under the open sky to dry. Once dried, the tea is rolled in bamboo baskets which crushes the leaves and starts the fermentation process. Once the desired fermentation level has been reached, the tea is dried further at low temperature to set. The taste is flowery and sweet with a glowing green cup colour.
